This three-time Blue Ribbon winning sweet pickle was a creation of my great-great grandmother MawMaw Ellis. She called them “Virginia chunks” and had never traveled outside the state of Texas. A little ancestry work shows that her grandparents and great grandparents were from Virginia. My granddaughter Claire Bear calls the “yummy.” These pickles take 12 days to make and brine for a week before the sugar and spices transform them into nearly candy.

Old-fashioned sweet cucumber, patient brine, and warm pickle spice, almost candy but still wearing its Sunday-best crunch. Sweet Chunk Pickles are bold, sweet, and satisfyingly crisp. They are made for snack trays, relish plates, picnic lunches, and anyone who likes a sweeter pickle bite.
